- .0626 pound chopped garlic
- 16 ounces diced onion
- 8 ounces diced carrot
- 8 ounces diced celery
- 2 pounds diced ham
- 3 pounds diced potato
- 4.75 pounds great northern white beans
- 6 pounds canned diced tomatoes
- 5 3/4 cups canned tomato juice
- 16 cups water
- .5 pound low sodium vegetable base
- 4 cups low fat milk
Directions
In a steam jacket kettle, measure and sauté garlic, onion, carrot, celery, and ham for 10 minutes.
Measure and add diced potato, great northern beans, diced tomato, tomato juice, water and ham base. Bring to boil. Simmer for 20 minutes.
Measure and add milk. Do not boil after this point.
Place in warmer or in steam table.
Appropriate serving dish: Soup insert.
Garnish: onion flower.
