- 6 Stalks Celery, Sliced Thin
- 6 Each Carrots, Sliced Thin
- 3 Each Onion, Chopped Fine
- 1 Tablespoon Minced Garlic
- 3/8 Cup Chili Powder
- 3 Tablespoons Olive Oil
- 2 Tablespoons Ground Cumin
- 1 1/2 Teaspoon Salt
- 1 1/2 Teaspoon Black Pepper
- 90 Ounces Kidney Beans, Rinsed & Drained
- 3 Pounds Ground Turkey
- 44 Ounces Diced Tomatoes, Undrained
- 12 Ounces Diced Green Chiles
Directions
- Combine celery, carrots, onion, garlic, chili powder, oil, cumin, salt, and pepper.
- Cook ground turkey. Drain. Add vegetables and cook until vegetables are tender. Stir in beans, tomatoes, and peppers. Bring to a boil and reduce heat.
- Cover and simmer for 20 minutes.
