Tomato Basil Soup

Ingredients

  • 2 1/2 tablespoons olive oil
  • 2 1/2 Tablespoons olive oil
  • 1 cup minced yellow onions
  • 3 Tablespoons minced garlic
  • 3/4 cup tomato paste
  • 5 1/2 pounds tomato concasse
  • 5 quarts water
  • 1 Tablespoon kosher salt
  • 3 Tablespoons fresh, chopped basil leaves
  • 1 Tablespoon minced jalapeno peppers
  • 1 3/4 teaspoon fresh chopped oregano
  • 1 3/4 teaspoons fresh chopped thyme
  • 1 cup white wine
  • 1/8 teaspoon ground bay leaf

Directions

  1. Heat the oil large soup kettle or stock pot and sauté the onion and garlic in the oil until the onion has become translucent. Do not let the garlic burn.
  2. Add the tomato paste to the pot and sauté until it has a sweet aroma and taken on a rusty color.
  3. Add the tomato concasse, water, salt, basil, jalapeno, oregano, thyme, wine and bay leaf. Simmer for 30 minutes. Either in the pot with and immersion blender or by using a standard blender, puree the soup. When the soup has been pureed, return it to the pot, if it was removed and reheat to a minimum internal temperature of 140 degrees. Hold at a minimum temperature of 140 degrees at all times.
