Ingredients
- 2 1/4 cups dried kidney beans, soaked overnight in cold water
- 2 1/4 cups dried navy beans, soaked overnight in cold water
- 2 1/4 cups dried black beans, soaked overnight in cold water
- 3 1/2 quarts water
- 2 each bay leaf
- 1 1/2 teaspoons kosher salt
- 3 pounds green bell peppers, roasted, peeled and seeded
- 3 pounds red bell peppers, roasted, peeled and seeded
- 1/2 cup olive oil
- 3 cups diced yellow onion
- 3 Tablespoons minced garlic
- 3 Tablespoons chili powder
- 3 Tablespoons dried oregano
- 2 Tablespoons ground cumin
- 1 1/2 teaspoons red pepper flakes
- 7 cups peeled, seeded and diced tomatoes
- 1 cup fresh cilantro
- 1 cup low sodium cheddar cheese, grated
- 1/2 cup thinly sliced scallions
Directions
- Drain the beans and discard the soaking water. In a large pot over high heat, combine the beans, water and bay leaf. Bring to a boil, skimming frequently the scum that rises to the top. Reduce the heat to low and simmer until the beans are tender but still firm, 60-70 minutes. When beans are nearly done cooking (about 2/3 finished) add 3/4 teaspoon salt. When beans are finished cooking, drain the cooking liquid and discard the bay leaves. Set aside.
- When the beans are cooked, coarsely chop the roasted bell peppers and set aside. In a large saucepan, heat the oil over medium heat. Add the yellow onion and sauté until soft and lightly golden, about 6 minutes. Stir in the garlic, chili powder, oregano, cumin, red pepper flakes, and the remaining 3/4 teaspoon salt. Cook until fragrant, 1-2 minutes. Add the bell peppers, cooked beans, tomatoes, and cilantro and cook until the tomatoes are heated through, 20 minutes.
- Ladle the chili into individual bowls and garnish each serving with 2 teaspoons of cheese and 1 teaspoon of green onions.
