Ingredients
- 5 1/4 quarts water, divided
- 6 cups dried yellow split peas (yellow are more traditional but use green if yellow are unavailable)
- 4 each bay leaf
- 3 quarts chopped cauliflower florets
- 2 Tablespoons kosher salt
- 3 Tablespoons canola oil
- 6 cups diced yellow onion
- 3 Tablespoons minced peeled fresh ginger
- 1/4 cup minced fresh garlic
- 6 Tablespoons cumin seeds
- 6 Tablespoons brown mustard seeds
- 3 Tablespoons ground coriander
- 2 Tablespoons ground turmeric
- 2 teaspoons cayenne
- 3/4 teaspoon ground cloves
- 6 quarts torn spinach leaves
Directions
Combine 3-3/4 quarts water, peas, and bay leaves in a large pot; bring to a boil. Reduce heat, and simmer, partially covered, 50 minutes or until peas are tender. Add 6 cups water, cauliflower and salt; bring to a boil. Reduce heat and simmer, uncovered for 20 minutes or until cauliflower is very tender, stirring occasionally.
- Remove from heat; discard bay leaves.
Heat oil in a stainless rondo over medium-high heat. Add onion, ginger, and garlic; saute 3 minutes. Add cumin, mustard seeds, coriander, turmeric, cayenne and cloves.
Cook over low heat until onions soften and spices are fragrant, about 7-10 minutes, stirring frequently. Add onion mixture to pea mixture. Simmer, uncovered, 15 minutes or until thick. Stir in spinach; cook 3 minutes or until spinach wilts.
