Ingredients
- 1/4 cup canola oil 3/4 pound shallots, peeled and brunoise (super-small dice)
- 3/4 pound celery, medium dice
- 1 1/4 pounds carrots, peeled, medium dice
- 2 1/2 pounds potatoes, peeled, medium dice
- 5 1/2 quarts water
- 8 pounds canned pumpkin NOT pumpkin pie filling
- 1/4 cup ground coriander
- 2 Tablespoons ground cumin
- 2 teaspoons ground cinnamon
- 1 Tablespoon ground cloves
- 1 Tablespoon kosher salt
- 1/2 cup fresh lemon juice
- 2 teaspoons nutmeg (garnish), divided
Directions
- Heat oil in large soup pot over medium high heat; add shallots, celery, carrots and potatoes. Stir to mix with the oil and sauté for 5-7 minutes.
- Add water, pumpkin, coriander, cumin, cinnamon, cloves and salt. Bring to boil, reduce heat to a simmer, cover and simmer gently for 20-30 minutes, or until all vegetables are tender. Remove from heat. Add lemon juice.
- Blend soup in food processor, blender or with immersion blender until smooth. Return to pan; heat through. Serve hot, garnished with pinch ground nutmeg.
