Spiced Pumpkin Soup

Ingredients

  • 1/4 cup canola oil 3/4 pound shallots, peeled and brunoise (super-small dice)
  • 3/4 pound celery, medium dice
  • 1 1/4 pounds carrots, peeled, medium dice
  • 2 1/2 pounds potatoes, peeled, medium dice
  • 5 1/2 quarts water
  • 8 pounds canned pumpkin NOT pumpkin pie filling
  • 1/4 cup ground coriander
  • 2 Tablespoons ground cumin
  • 2 teaspoons ground cinnamon
  • 1 Tablespoon ground cloves
  • 1 Tablespoon kosher salt
  • 1/2 cup fresh lemon juice
  • 2 teaspoons nutmeg (garnish), divided

Directions

  1. Heat oil in large soup pot over medium high heat; add shallots, celery, carrots and potatoes. Stir to mix with the oil and sauté for 5-7 minutes.
  2. Add water, pumpkin, coriander, cumin, cinnamon, cloves and salt. Bring to boil, reduce heat to a simmer, cover and simmer gently for 20-30 minutes, or until all vegetables are tender. Remove from heat. Add lemon juice.
  3. Blend soup in food processor, blender or with immersion blender until smooth. Return to pan; heat through. Serve hot, garnished with pinch ground nutmeg.
