Roasted Red Pepper Bisque with Cilantro

Ingredients

  • 9 pounds red peppers
  • 1/4 cup olive oil
  • 1 1/2 pounds yellow onion, medium dice
  • 1/2 cup peeled garlic cloves
  • 4 quarts water
  • 3 pounds Yukon gold potatoes, washed and diced medium
  • 1/2 cup tomato paste
  • 1 bunch cilantro, chopped
  • 1 quart evaporated skim milk
  • 1 1/2 teaspoons black pepper
  • 1 1/2 teaspoons kosher salt

Directions

  1. Roast peppers in 450 degree oven on sheet pans until skins are blackened. Remove from oven and place in large bowl and cover with plastic wrap to steam and soften. When peppers are cool enough to peel, remove the skins and seeds and dice small.
  2. In a stock pot, sauté the onions and garlic in olive oil until golden brown.
  3. Add water, peppers, potatoes and tomato paste. Bring to a boil, reduce heat and simmer for 30 minutes or until potatoes are soft and cooked.
  4. Puree soup with an immersion blender or in a regular blender in small batches. If you want a smooth soup, strain through a fine China cap. If not, return soup to pot and bring to a simmer.
  5. Add evaporated skim milk, cilantro and seasonings; simmer for an additional 5 minutes. Serve.
