Ingredients

  • 1.5 pounds yellow onions
  • .042 pound chopped garlic
  • .25 cup olive oil
  • 3 pounds eggplant
  • 1.25 pound frozen sliced zucchini
  • 1 pound green peppers
  • 3 pound medium tomatoes
  • .004 pound ground oregano
  • .003 pound thyme leaves
  • .008 pound chili powder
  • .042 pound salt
  • .01 pound black pepper
  • .006 pound basil leaves
  • 3.171 pounds canned kidney beans

Directions

1. Slice onions thin.

2. Cut eggplant into 1/2 inch pieces.

3. Clean and chop green peppers.

4. Clean and chop tomatoes coarse.

5. Drain and rinse kidney beans.

6. In a tip kettle, cook sliced onion and garlic in ½ of the oil amount that recipe calls for, over medium heat stirring occasionally, until onion is softened.

7. Add the remaining oil and heat it over moderately high heat until it is hot but not smoking, and add the eggplant.

8. Cook the mixture, stirring occasionally, for approximately 8 minutes, or until eggplant is softened. 9. Stir in zucchini, green peppers, tomatoes, kidney beans and spices; Cook over medium heat for approximately 5-7 minutes, or vegetables are tender.

10. Serve a 1 cup portion/serving; using an 8 ounce spoodle.

11. Maintain temperature about 140 degrees at all times throughout service
