- 2 pounds soybean oil
- 4 pounds diced onion
- 1 pound diced celery
- .0156 pound garlic in oil
- .5 pound tomato paste
- 16 pounds water
- .0625 pound vegan savory roasted soup base
- .0078 pound ground nutmeg
- 5 pounds canned pumpkin
- 5 pounds peeled and chunked butternut squash
- .0312 pound table salt
- .0156 pound white ground pepper
- 4 pounds plain soy milk
- .33 pound brown sugar
- .0032 pound whole bay leaves
Directions
In a medium stock pot, heat the oil and sauté the onions, celery and garlic until translucent.
Add the tomato paste, water and base, bay leaves, brown sugar, squash chunks and nutmeg and simmer for about 45 minutes. Remove the bay leaves and puree the vegetables with an immersion blender.
Add pumpkin and the soy milk and season with the salt and white pepper. Heat thoroughly
