Orzo and Chickpea Soup

Ingredients

  • .0469 quart olive oil
  • 18 ounces diced onion
  • .0375 pounds chopped garlic
  • .0078 pounds rosemary leaves 6 ounces each
  • 6 pounds low sodium canned diced tomatoes
  • .375 pound low sodium vegetable base
  • 5.625 pounds canned garbanzo beans, drained
  • 1.125 pounds orzo pasta
  • 4 quarts water
  • .0104 pound salt
  • .0052 pound black pepper

Directions

Drain garbanzo beans. Place in cooler until needed.

Heat olive oil in steam kettle.

Sauté diced onion, garlic, rosemary, 5 minutes or until onion is tender.

Add undrained tomatoes, water, base, drained garbanzo beans. Bring to boil.

Add uncooked orzo and boil for 10 minutes or until orzo is tender. Add salt and pepper

Transfer to soup tureen for service.
