Miso Soup with Watercress and Shiitakes

Tomatoes, ginger, garlic, tofu and onions- this is so much more than watercress and shiitakes.

 

Ingredients

  • 1/4 cup olive oil
  • 1 quart finely chopped yellow onion
  • 6 cups plum tomatoes, peeled, seeded and chopped
  • 1/4 cup peeled and finely chopped fresh ginger
  • 1/4 cup minced fresh garlic
  • 1 gallon vegetable stock prepared with low sodium vegetable base per manufacturer instructions
  • 1/2 cup white miso
  • 1 pound firm tofu, drained and cut into 1/4-inch dice
  • 12 ounces fresh shiitake mushrooms, stemmed, brushed clean, and caps thinly sliced
  • 1 quart watercress leaves
  • 1/4 cup thinly sliced scallion, both white and green parts

Directions

In a large saucepan, heat the olive oil over medium heat. Add the yellow onion and sauté until soft and translucent, about 4 minutes. Add the tomatoes, ginger, and garlic and sauté until the tomatoes are softened, about 5 minutes. Add the stock and bring to boil. Reduce the heat to a simmer.

Whisk in the miso until dissolved. Add the tofu, mushrooms, and watercress and simmer until the tofu is heated through and the mushrooms and watercress are softened, about 1 minute.

Serve 8 fluid ounces of soup and garnish with 1/2 tsp scallions. Serve immediately.
