Italian Vegetable Soup

Ingredients

  • 2 Tablespoons olive oil
  • 8 ounces yellow onions, diced 1/2”
  • 8 ounces carrots, diced 1/2”
  • 8 ounces celery, diced 1/4”
  • 16 ounces elbow macaroni, dry
  • 4 quarts water
  • 11 ounces potatoes, cubed 1/2”
  • 2 Tablespoons minced garlic
  • 1 1/3 Tablespoons rosemary, dried
  • 1 1/3 pinches ground bay leaf
  • 2/3 teaspoon dried Chile flake
  • 2/3 teaspoon basil, dried
  • 1 1/3 teaspoons oregano, ground
  • 1 1/3 quarts crushed tomatoes, canned
  • 4 teaspoons lemon zest
  • 3 pounds kidney beans, canned, drained
  • 1 cup grated parmesan cheese

Directions

Heat olive oil in medium pot and sauté the onions, carrots, and celery until the onions become translucent.

  1. Add the macaroni to the sauté with the vegetables.
  2. Add the water, potatoes, garlic, rosemary, bay leaf, Chile flake, basil, oregano, and crushed tomatoes to the pasta and vegetables. Simmer for 20 to 30 minutes or until the pasta is tender.
  3. Add kidney beans and lemon zest and heat to a minimum internal temperature of 165 degrees for a minimum of 15 seconds. CCP –Hold at a minimum temperature of 140 degree for service. Garnish with 2 teaspoons parmesan cheese.
