Gingered Winter Squash and Root Vegetable Soup

Ingredients

  • 1/3 cup olive oil
  • 3 cups large diced yellow onion
  • 1 Tablespoon ground ginger
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons dry mustard
  • 3/4 teaspoon mace
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 1/2 quarts cubed peeled butternut squash (about 6 pounds)
  • 1 3/4 quarts cubed peeled sweet potato (about 2 1/4 pound)
  • 2 1/4 cups peeled, 1-inch-thick, sliced parsnip
  • 1 gallon water
  • 3 cups evaporated skim milk

Directions

  1. Heat oil in a large stockpot over medium heat. Add onion, ginger, salt, cumin, dry mustard, mace, cinnamon, pepper and cayenne; sauté 2 minutes. Reduce heat to low; cover and cook 5 minutes or until onion is tender. Add squash, sweet potato, parsnip, and water. Bring to a boil; reduce heat, and simmer 30-45 or until squash is tender.
  2. Puree soup using an immersion blender or in small batches in a food processor and process until smooth. Return pureed mixture to pan; stir in milk. Cook over low heat 5-15 minutes or until thoroughly heated, stirring occasionally.
