- .1250 quart canola oil
- 32 ounces diced onion
- .125 pound chopped garlic
- 2 pounds roma tomatoes
- 7.5 pounds canned fava beans
- .0106 pound ground cumin
- .0047 pound cayenne pepper
- .1875 quart 100% lemon juice
- .0625 pound fresh parsley
Directions
Drain and rinse fava beans. Place in cooler until needed.
Clean, core and dice tomatoes. Place in cooler until needed.
Clean, dry and chop parsley. Place in cooler until needed.
In a steam jacket kettle, measure and combine oil, onion and garlic. Sauté 5 minutes.
Measure and add tomatoes. Sauté 5 minutes.
Measure and add fava beans, cumin, and cayenne. Sauté 10 minutes.
Measure and add lemon juice and parsley. Sauté 2 minutes.
Place above mixture in food processor. Pulse to consistency of hummus.
Place in appropriate container with garnish.
