Ingredients

  • 4 teaspoons extra virgin olive oil
  • 4 cups sliced yellow onion
  • 4 cups sliced fennel
  • 24 cups chopped plum tomatoes (about 6 pounds)
  • 20 cups water
  • 8 cloves garlic, crushed
  • 28 cups chopped, seeded, peeled plum tomatoes (about 7 pounds)
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 3/4 cup thinly sliced fresh basil
  • 4 teaspoons fresh lemon zest

Directions

Heat oil in a large saucepan over medium heat. Add onion and fennel and sweat (cook until vegetables are soft and translucent but not brown) for 6-10 minutes or until tender. Add 24 cups tomato and cook 2 minutes. Reduce heat to low. Add water and garlic; simmer covered for 30 minutes.

Remove cover and simmer liquid for 45 minutes or until reduced to about 24 cups. Drain broth mixture through a sieve into a large bowl and discard solids. Return broth to pan.

Stir in 28 cups tomatoes, salt and pepper. Bring soup to a boil; reduce heat and simmer uncovered for 10 minutes. Remove from heat and stir in basil and lemon zest.
