Ingredients
- 1 pound farro
- 0.25 pound poblano pepper
- 0.125 pound jalapeno peppers
- 0.125 pound cilantro
- 0.0104 pound chopped garlic
- .625 cup olive oil
- 0.0104 pound salt
- 0.0034 pound black coarse ground pepper
- .5 cup white vinegar
- 1 cup water
- 1 each lime
Directions
- In a steam jacket kettle bring water to a boil and add Indian Harvest Farro. Simmer 30 minutes. (If liquid disappears, add a little more to keep Farro moist.) Drain and chill Farro on a sheet pan.
- In a sprayed 2 inch full size pan place poblanos and jalapenos after removing stems. Place in combi-oven set to dry heat at 350 degrees for about 15 minutes or until charred.
- In a food processor place charred peppers, cilantro, garlic and olive oil. Puree. Season with salt and pepper.
- Add chilled Farro, vinegar and water a little at a time.
- Add juice from lime.
- Adjust seasoning if needed.
- Appropriate serving dish: catering platter
- Garnish: cilantro sprig.
