Ingredients
- 2 1/3 pounds dried black turtle beans, cleaned – rinsed –drained
- 1 1/2 Tablespoons low sodium chicken base
- 1 1/2 gallons water
- 2 1/4 teaspoons oregano leaves, dried
- 2 1/4 teaspoon cumin, ground
- 1/3 teaspoon bay leaves, ground
- 3 ounces bacon, cooked, diced
- 18 1/2 ounces 1/4 inch diced yellow onions
- 3 Tablespoons minced garlic
- 12 ounces 1/4 inch diced green bell peppers
- 1/3 cup fresh chopped cilantro
- 4 1/2 Tablespoons red wine vinegar
- 1/2 teaspoon kosher salt
- 1 teaspoon black pepper
Directions
Soak beans in water (not listed) overnight at a maximum temperature of 41 degrees. Drain and discard liquid.
Combine the low sodium chicken base with the water.
In a large soup kettle or stock pot: Combine the beans, broth, oregano, cumin and ground bay leaf. Bring to a boil. Reduce heat and simmer for 1 hour or until the beans are almost tender.
In a sauté pan, combine the bacon, onions, garlic and bell pepper. Sauté until vegetables are tender. Add the sautéed bacon and vegetables into the soup and cook for an additional hour or until the beans are tender.
Remove 1/3 of the soup and blend using a burr mixer. Stir blended soup back into the remaining 2/3 of soup.
Stir in the cilantro, vinegar, salt and black pepper. CCP- Heat to a minimum internal temperature of 165 degrees for a minimum of 15 seconds. CCP- Hold at a minimum temperature of 140 degrees for service.
