Ingredients
- 2 Tablespoons olive oil
- 6 ounces small diced yellow onion
- 4 1/2 cups small diced celery
- 2 cups sliced leeks
- 3 quarts water
- 2 teaspoons salt
- 1 Tablespoon minced garlic
- 3 pounds broccoli florets
- 35 fluid ounces evaporated skim milk
Directions
Heat olive oil in a stock pot over medium high heat. Add onions, celery and leeks and sweat until translucent. Do not brown.
Add water and salt, stir well and bring to a boil. Simmer for 10 minutes.
Add broccoli and garlic and continue to simmer for 30 minutes or until broccoli is soft and tender.
Puree and strain, return soup to a simmer.
Add evaporated skim milk, stir and serve.
