Creamy Style Broccoli Soup

Ingredients

  • 2 Tablespoons olive oil
  • 6 ounces small diced yellow onion
  • 4 1/2 cups small diced celery
  • 2 cups sliced leeks
  • 3 quarts water
  • 2 teaspoons salt
  • 1 Tablespoon minced garlic
  • 3 pounds broccoli florets
  • 35 fluid ounces evaporated skim milk

Directions

Heat olive oil in a stock pot over medium high heat. Add onions, celery and leeks and sweat until translucent. Do not brown.

Add water and salt, stir well and bring to a boil. Simmer for 10 minutes.

Add broccoli and garlic and continue to simmer for 30 minutes or until broccoli is soft and tender.

Puree and strain, return soup to a simmer.

Add evaporated skim milk, stir and serve.
