Directions
Sauté onions, carrots, celery, and garlic in oil for 2-3 minutes.
Add all other ingredients except parsley and bring to a boil. Simmer for 15-20 minutes to develop flavor.
Heat to 145 degrees for 15 seconds.
Add parsley and pan into 4 1/2 inch pans, cover and hold for service.
