Ingredients
- 2 Tablespoons olive oil
- 2 finely chopped yellow onions
- 2 finely chopped celery stalks
- 1 medium finely chopped bell pepper
- 1/2 seeds removed and finely chopped jalapeno
- 1/2 teaspoon salt
- 2 teaspoons dried oregano
- 1 teaspoon dried ground cumin
- 2 large bay leaves
- 1-4 ounce can diced fire roasted mild green chiles
- 1 batch of Chorizo (homemade sausage mixture)
- 2 1/2 quarts low-sodium chicken stock 3-15 ounce cans of drained low sodium black beans
- Black pepper to taste
Directions
In a 6 quart stock pot, heat the olive oil over medium-high heat until shimmering and add the onions, celery, bell pepper, and jalapeno pepper to the pan. Stir to combine, add the salt, and reduce the heat to medium-low. Slowly cook the vegetables for about 12-15 minutes, stirring occasionally, until they’re very soft but not browned and most of the liquid has evaporated.
Raise the heat to medium and add the oregano, cumin, and bay leaves. Stir the mixture until the herbs and spices become fragrant, about 2 minutes. Remove the vegetable mixture to a plate and return the pot to the stove. After heating 1 tablespoon of olive oil until hot, add the Chorizo to the pan and sauté, stirring frequently, until the meat is golden brown, about 6-8 minutes.
Return the vegetable mixture back into the pan with the Chorizo and stir to combine. Add the can of mild green chiles, the black beans, and the stock. Adjust seasoning, if desired. Reduce heat to medium-low and simmer for approximately 20 minutes.
