Spicy Mango Soup

Ingredients

  • 10 pounds cubed mango
  • .5 pound jalapeno pepper
  • 5 Tablespoons lemon juice
  • .0156 pound cayenne pepper
  • .0039 pound kosher salt
  • 2 pounds light cream
  • 3 pounds water

Directions

Prep all the ingredients according to the recipe instructions. 

Place the mango into a cold kettle and puree it with an immersion blender. 

Thin with water and adjust flavor and consistency with evaporated skim milk. 

Once the appropriate consistency has been achieved season to taste with salt, lemon and cayenne pepper. Garnish with fine chopped jalapenos. 

Hold cold and serve cold.
