Ingredients

  • 4 1/2 pounds cucumber, peeled, diced small
  • 3/4 pound red onion diced small and rinse under cold water
  • 6 1/2 pounds fresh, ripe tomatoes, small dice
  • 3 quarts water
  • 1 12 quarts tomato juice
  • 1 1/2 cups red wine vinegar
  • 1/4 cup chopped fresh cilantro
  • 2 Tablespoons Tabasco sauce
  • 3 cups small dice, fresh avocado (prepared just before service)
  • 48 each thin slices seedless cucumber

Directions

  1. Combine all prepared ingredients except avocado and sliced cucumber in a large, either plastic or stainless container. Mix well to combine and chill for 24 hours.
  2. To serve, garnish 8 ounces chilled soup with 1 tablespoon avocado and 1 slice cucumber.
