Ingredients

  • 1 Tablespoon canola oil
  • 1/3 cup minced garlic
  • 1/3 cup grated fresh peeled ginger
  • 2 Tablespoons ground cumin
  • 2 Tablespoons ground coriander
  • 1 Tablespoon curry powder
  • 1 teaspoon sea salt
  • 2 1/2 pounds green lentils (6 1/4 cup)
  • 1 1/2 gallons water
  • 3/4 cup fresh lemon juice

Directions

  1. Heat the vegetable oil over medium heat in a large stock pot. Add the garlic, ginger, cumin, coriander, curry powder, and salt and cook for 1 to 2 minutes. Add the lentils and stir to coat with the spices. Add the water and bring to a boil.
  2. Lower the heat to simmer and cook over low heat, stirring often, for about 45 minutes. The lentils will soften and fall apart making a rustic textured soup. You may puree until smooth if desired.
  3. Stir in the lemon juice and serve.
