Ingredients

  • DRESSING:
  • 2 1/4 cups fresh cranberries, roughly chopped
  • 3/4 cup cranberry juice
  • 3 Tablespoons granulated sugar
  • 2 Tablespoons minced fresh garlic
  • 1/2 cup cider vinegar
  • 1/4 cup olive oil
  • 1 Tablespoon kosher salt
  • 1 Tablespoon ground black pepper SALAD:
  • 6 cups cooked wild rice (1-1/2 cup uncooked)
  • 3 cups cooked orzo pasta (1-1/2 cup uncooked)
  • 1 1/2 cups fine diced yellow bell pepper
  • 1 1/2 cups fine diced red bell pepper
  • 1 1/2 cups thinly sliced scallions, both white and green parts
  • 1/2 cup chopped fresh parsley

Directions

To prepare dressing, combine cranberries, juice, sugar and garlic in a small saucepan.

Bring to a boil; simmer for 2 minutes. Remove from heat. Whisk in vinegar, oil salt and pepper.

Chill.

To prepare salad, combine wild rice, orzo, peppers and scallions in a large bowl. Dress salad with dressing and toss to coat.
