Ingredients
- 15 ounces diced carrot
- .9375 pound bok choy
- .6250 pound whole baby corn
- .5 cup lite soy sauce
- .5 cup red wine vinegar
- .0038 pound chopped ginger
- .0163 pound chopped garlic
- .1563 pound sliced green onion
- 5 Tablespoons water
- .0675 pound cornstarch
- 1.875 pound sugar-snap peas
- 1.25 pound medium tomatoes
- 1.315 pound water chestnuts
Directions
1. Prepare vegetables: Weigh carrots. Clean and coarsely chop bok choy. Drain baby corn.
2. Mix marinade ingredients in no metal bowl. Stir in prepared vegetables until coated. Cover and place in cooler for approximately 30 minutes.
3. Weigh green onions. Clean dice and seed tomato. Drain water chestnuts. Set aside in cooler until needed.
4. Heat tip kettle and coat with small amount of oil. Add drained vegetables and stir fry until tender crisp. Remove from kettle reserving juices in kettle.
5. Combine reserved juice and reserved marinade in tip kettle. Add prepared green onions to this mixture and stir fry until tender crisp.
6. Stir together water and cornstarch, add to green onion mixture. Cook until mixture is thickened and bubbly, stirring constantly.
7. Stir in all vegetables, snap peas, tomatoes and water chestnuts. Continue cooking until mixture reaches 165 Fahrenheit. 8. Serve with 4 ounces spoodle over rice
