Ingredients

  • 12 pounds water
  • 6 pounds pearl barley
  • 0.375 pound olive oil 25/75 blend
  • 0.12 pound low sodium savory roasted vegan soup base
  • 1 pound onion, diced
  • 1 pound julienned green pepper
  • 6 pounds drained black beans
  • 0.0312 pound Cajon seasoning
  • 100 each 8 inch flour tortilla
  • 5 pounds salsa
  • 0.25 pound fresh cilantro

Directions

1. Bring water and vegetable base to a boil. Add the barley and Cajun seasoning and simmer for 15-20 minutes.

2. Sauté the onions and peppers in the olive oil until translucent. Add the beans that have been rinsed and drained and barley and stir until thoroughly incorporated. 
3. In the center of each tortilla shell place one 4 ounce scoop of the barley mixture, folding the ends in to seal then roll the burrito line in a greased 2 inch half hotel pan.
4. Bake in a combi or convention oven with 100% heat at 375 degrees for 10-12 minutes to an internal temperature of 155 degrees. Pull and top with salsa and chopped cilantro.
