Vegan Vegetable Scramble

Ingredients

  • 5 pounds crumbled extra firm tofu
  • .375 pound onion
  • .1875 pound red pepper
  • .1875 pound green pepper
  • .1875 pound sliced mushroom
  • To taste, kosher salt
  • To taste, white ground pepper
  • .0208 pound garlic in oil
  • .0625 pound olive oil 25/75 blend

Directions

1. Heat the oil in a sauté pan over a medium flame. When the oil is hot add the garlic, onions, mushrooms and peppers. Sauté until just tender.

2. Add the crumbled tofu and the tofu water to the pan and continue to sauté for approximately 10 minutes or until the tofu reaches an internal temperature of 145 degrees.

3. If the tofu sticks during the cooking process, add a small amount of water to loosen it from the pan and stir almost continuously. Season accordingly.

4. Place in a 4 inch half pan and serve immediately. Do not produce more than one pan at a time.
