Vegan Sheppard’s Pie

Ingredients

  • 2 pounds vegetable burger crumbles
  • .0625 pound chopped garlic
  • 4 ounces diced onion
  • 4 ounces diced carrot
  • 4 ounces diced celery
  • .5 pound medium tomatoes
  • 2 pounds canned black beans
  • 1 pound frozen peas and carrots
  • 2 pounds tomato puree
  • 2.5 pounds tri-cut redskin potato
  • .0058 pound basil

Directions

1. Place veggie crumble in safety thaw overnight or cooler overnight.

2. In a steam jacket kettle or tilt skillet sauté veggie crumbles with garlic and onion for 5 minutes.

3. Add carrot, celery and tomato. Cook 15 minutes.

4. Place potatoes in steamer and steam until soft. In a mixer whip until creamy. Place in warmer.

5. In a sprayed 2 inch full size pan layer in following order:
Place veggie crumbles mixture on bottom Place black beans on top of veggie crumble mixture Place peas and carrots on top of black beans Place tomato sauce on top of peas and carrots Place mashed potato on top of tomato sauce
6. Bake covered in combi-oven set to dry heat at 350 degrees for 30 minutes. Bake uncovered for 15 minutes to give mashed potato a golden crust.
7. Appropriate serving dish: 2 inch full size pan.

8. Garnish: herb, basil, fresh, chopped.
