Ingredients

  • 0.0312 pound of olive oil
  • 0.0375 pound of diced onion
  • 0.0375 pound of diced red bell pepper
  • 0.0312 pound minced garlic in oil
  • 1.5 pounds water
  • 0.0624 pound of parsley
  • 1.5 pounds extra firm organic tofu
  • 1 pound frozen peas
  • 1.5 pounds tempeh
  • 0.75 pound rice
  • 0.0001 pound vegan low sodium roasted vegetable base
  • 0.0001 pound bay whole leaves
  • 0.0001 pound saffron herbs

Directions

Preheat oven to 400 degrees with oven rack in lower third of oven.

In a paella pan or large skillet, heat oil on medium heat.

Stir in the onion and red pepper, and cook for 5 min, until onion is soft.

Stir in garlic and rice and cook for 2 min. Stir in water, base, bay leaf and saffron and bring to a boil.

Add the remaining ingredients and mix well. Return to a boil.

Place in oven, uncovered, for 25 min. until all liquid is absorbed and rice is tender.

Discard bay leaf and serve.
