- .0434 pound roasted low sodium garlic base

Directions
1. Mix cornmeal with enough cold water to make a slurry. Set aside.
2. Bring rest of water and vegan base to a boil. Pour cornmeal slurry into boiling broth and stir until thickened. Mixture should bubble sluggishly. Add black pepper and nutmeg. Keep warm.
3. Heat oil and sauté mushrooms in tilt. Cover and cook for 5 minutes. Add garlic, parsley and soy milk, bring to a simmer.
4. Whip flour into oil to form a beurre manie. Thicken the mushroom sauce with this mixture.
5. Grease 2 inch half pans. Pour 2 1/2 pounds of polenta in pan—3/4 inch thick. Cover with 1 pound of creamed mushrooms and top with 8 slices vegan cheese.
6. Repeat once and bake 8-12 minutes or until cheese starts running and so that the internal temperature is 145 degrees for 15 seconds.
