Vegan Cheesy Shells with Broccoli

Ingredients

  • 10 pounds whole grain medium pasta shells
  • 6 pounds broccoli florets
  • 16 pounds plain soy milk
  • 0.75 pound all purpose flour
  • 0.75 pound soybean oil
  • 5 pounds vegan shredded cheddar cheese

Directions

Cook pasta and cool properly; reserve for later use. In a kettle heat the oil and add in the flour mix together and make a roux.

Add the soy milk and gently heat until thickened. Add the shredded vegan cheese.

When the cheese is melted and the sauce is complete add the cooled pasta and the uncooked broccoli.

Spread the mixture into the appropriate pan and double wrap with saran making sure that there are no air holes and steam until an internal temperature of 145 degrees has been reached for 15 seconds. (Approximately 20 minutes). Stir with a spoon to re-blend serve immediately
