Ingredients
- 8 cups green beans, trimmed (about 1-1/2 pounds)
- 16 cups coarsely chopped tomato (about 8 pounds)
- 4 cups thinly sliced red onion
- 2 cups crumbled feta cheese (8 ounces)
- 1/2 cup chopped fresh mint
- 1/2 cup red wine vinegar
- 2 teaspoons kosher salt
- 10 teaspoons extra virgin olive oil
- 1 teaspoon ground black pepper
- 4 15-1/2 ounce cans chickpeas, drained
Directions
Place the green beans in a large saucepan of boiling water and cook for 3 minutes or until just tender crisp. Drain and plunge beans into ice water. Drain.
Combine tomato, beans and remaining ingredients in a large bowl; toss well to combine.
