Tofu Broccoli Casserole

Ingredients

  • 6 pounds crumbled extra firm tofu
  • .25 pound garlic in oil
  • 2.5 pounds onion To taste, chili powder
  • 1.5 pounds drained black beans
  • 2 pounds chopped broccoli
  • To taste, ground cumin
  • To taste, ground coriander
  • To taste, kosher salt
  • To taste, white ground pepper
  • 2 pounds picante sauce (or salsa)
  • 12 each 8 inch tortillas
  • 3 pounds vegan shredded cheddar cheese

Directions

1. Place the tofu in the robot coupe along with the spices and the garlic. Process until smooth. Add a small amount of oil if necessary to achieve the texture of ricotta cheese.

2. Remove the tofu mixture from the robot coupe and fold in the onion, chopped broccoli, black beans and vegan cheddar cheese.

3. Cut the 8 inch tortilla’s in 1/2.

4. Spray 2 inch 1/2 hotel pans with whole harvest pan spray and place 1 cup of picante sauce in the bottom of the pan.

5. Layer 4 1/2 tortillas on top of the salsa and top with the tofu broccoli mixture. Repeat this procedure 2 more times making sure to end with picante.

6. Place the casserole in a 325 degree oven and cook until an internal temperature of 145 degrees has been reached (approximately 20 minutes).

7. Remove from the oven and top with grated vegan cheddar cheese. Replace in the oven for 3-5 minutes or until the cheese is melted.

8. Serve immediately
