Toasted Barley

Ingredients

  • 2 1/2 pounds pearl barley (Indian Harvest preferred)
  • 2 1/4 gallons water
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup minced fresh garlic
  • 1 pound yellow onion, small dice
  • 12 ounces celery, sliced thin diagonally
  • 12 ounces carrots, peeled, sliced thin diagonally
  • 2 pounds crimini mushrooms sliced
  • 3 cups marsala wine
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 3 cups parsley, chopped
  • 1/2 cup minced chives, divided

Directions

Place barley on sheet pan and toast in 350 degree oven for 7-10 minutes until aromatic. Combine toasted barley and water in large pot, bring to a boil, reduce heat to simmer and cook for about 30 minutes or until barley is tender. Drain cooking water off barley and discard; keep barley hot.

While barley is cooking, heat oil in rondo over medium high heat; add garlic, onions, celery and carrots and sauté until vegetables begin to soften. Add mushrooms; stir to combine. Add marsala and continue cooking until mushrooms are tender and liquid has reduced by half. Season with pepper and salt.

Add barley and chopped parsley to mushroom mixture and stir gently to combine. Serve hot and garnish 3 each 4 ounces serving with 1 teaspoon chives.
