Tempeh with Oranges

Ingredients

  • 6 pounds cubed tempeh
  • 0.025 pound lite soy sauce
  • 0.0625 pounds reserved juice from drained mandarins
  • To taste, ground coriander
  • To taste, black pepper
  • 11 cups cabernet sauvignon
  • 0.0313 quart lime juice
  • 5 cups orange juice
  • 0.0625 pound olive oil 25/75 blend
  • 0.125 pound garlic in oil
  • 0.125 pound soybean oil
  • 0.25 pound minced fresh tarragon
  • 2.5 pounds drained mandarin oranges (packed in juice)

Directions

1. Toss the cubes tempeh with the soy sauce, mandarin juice, coriander and black pepper. Set aside to marinate.

2. Place the wine, lime juice and orange juice in a sauce pan and reduce by 1/2.

3. In a rondeau place over medium heat, place the oil. When the oil is hot add some of the tempeh and sauté until browned on all sides. Remove and hold hot. Continue batching the tempeh until it is cooked.
4. When the tempeh is cooked wipe out the pan to remove any residue and add a bit more oil. Add the garlic and sauté until it is starting to caramelize.
5. Add the reduced wine and juice mixture and continue cooking until it is slightly thickened. Stir in the tarragon and the orange segments. Simmer for about 3 minutes. Taste and re-season as necessary.
6. Toss in the tempeh, place in the appropriate serving vessel and serve immediately.
