- 5 pounds cubed tempeh
- 0.2 pound soybean oil
- 1.5 pounds diced red pepper
- 1.5 pounds diced green pepper
- 0.75 pound shredded carrot
- 0.4 pound garlic in oil
- 0.1 pound minced ginger in water
- 0.75 pound onion
- 0.75 pound leaf spinach
- 6.4 Tablespoons real lemon juice
- 0.0156 pound kosher salt
- 0.0156 pound black pepper
- 0.2 pound basil
- 8 Tablespoons Chablis
Directions
1. Heat flat top griddle to 350 degrees.
2. Heat oil and sauté tempeh, onions, red peppers, green peppers, garlic, and ginger. Sauté until onions and peppers are tender.
3. Add carrots and deglaze with wine and lemon juice. Let cook until liquid reduces by half.
4. Season with kosher salt and pepper.
5. Add spinach and basil toss well but do not cook too long. The spinach and basil are to have a bright green color.
