Ingredients
- 1 Quart 12 Ounces Water
- 2 Cups Yellow Cornmeal
- 2 Cups Water
- 2 Teaspoons Salt
- 2 Pounds Ground Turkey
- 2 Cups Onion, Chopped
- 2 Cups Green Pepper, Chopped
- 2 Tablespoons Minced Garlic
- 1/4 Cup Chili Powder
- 58 Ounces Diced Tomatoes, Drained
- 44 Ounces Whole Kernel Corn, Drained
- 1/2 Cup Tomato Paste
- 1/2 Cup Fresh Cilantro
- 2 Cups Monterey Jack Cheese
Directions
- Spray a full size steam table pan with cooking spray. Set aside.
- In sauce pan, bring the first listed water to a boil.
- In a small bowl, stir together the cornmeal, the second listed water, and 1 tsp. salt. Slowly add the cornmeal mixture to the boiling water, stirring constantly. Cook and stir until mixture returns to boiling. Reduce heat. Cook over low heat until mixture is very thick.
- Pour the hot mixture into the steam table pan.
- In a large skillet, cook turkey, onion, green pepper, and garlic until meat is brown. Drain off fat. Stir chili powder and remaining salt into meat mixture in skillet. Cook for one minute. Stir in the drained tomatoes, corn, paste, and cilantro.
- Spoon the meat mixture on top of the cornmeal mixture.
Bake, uncovered at 350 degrees for 25 minutes. Sprinkle with cheese.
