Ingredients

  • 6 cups cold water
  • 3 cups fine or medium ground bulgur
  • 3/4 cup fresh lemon juice
  • 1 quart seeded and diced tomatoes
  • 3 cups peeled, seeded and diced cucumber
  • 3/4 cup chopped fresh flat leaf parsley
  • 2/3 cup chopped fresh mint
  • 1/3 cup extra virgin olive oil
  • 3/4 cup finely chopped scallions
  • 3 Tablespoons grated lemon zest
  • 3 teaspoons minced garlic
  • 2 teaspoons kosher salt
  • 3/4 teaspoon black pepper

Directions

  1. Place bulgur and water in container large enough to submerge bulgur. Soak bulgur for 20 minutes. Rinse in a colander and press out excess water.
  2. Place bulgur in a large bowl with lemon juice and tomatoes and let sit for 30 minutes for the juice to soak into the bulgur.
  3. Add all the remaining ingredients and toss gently just until the ingredients are evenly distributed. Cover and refrigerate for 2 hours to allow the flavors to blend. Serve chilled.
