Ingredients
- 6 cups cold water
- 3 cups fine or medium ground bulgur
- 3/4 cup fresh lemon juice
- 1 quart seeded and diced tomatoes
- 3 cups peeled, seeded and diced cucumber
- 3/4 cup chopped fresh flat leaf parsley
- 2/3 cup chopped fresh mint
- 1/3 cup extra virgin olive oil
- 3/4 cup finely chopped scallions
- 3 Tablespoons grated lemon zest
- 3 teaspoons minced garlic
- 2 teaspoons kosher salt
- 3/4 teaspoon black pepper
Directions
- Place bulgur and water in container large enough to submerge bulgur. Soak bulgur for 20 minutes. Rinse in a colander and press out excess water.
- Place bulgur in a large bowl with lemon juice and tomatoes and let sit for 30 minutes for the juice to soak into the bulgur.
- Add all the remaining ingredients and toss gently just until the ingredients are evenly distributed. Cover and refrigerate for 2 hours to allow the flavors to blend. Serve chilled.
