Ingredients
- 9 pounds fancy tomato
- 4 pound diced onion
- 1 pound garlic in oil
- .125 pound parsley
- .125 pound basil
- .125 pound grey poupon Dijon mustard
- .0125 pound black pepper
- 2 pounds plain breadcrumbs
- 2 pounds scallion onion
- 2 cups low sodium vegetable broth
- 5 pounds extra firm organic tofu crumbled
Directions
Wash and halve the tomatoes, cut across not lengthwise.
Crumble the tofu into nugget size pieces.
In the robot coupe, fine chop the onions and strain out the onion juice, using a colander or china cap.
Mix scallions, onions, tofu, herbs, and spices, then mix in the broth. Add the bread crumbs to bind the stuffing.
On each tomato half, place a small mound of stuffing (about 2-3 ounces). Do not over stuff.
Bake at 325 degrees Fahrenheit for 10 minutes to an internal temperature of 145 degrees Fahrenheit for 15 seconds. Avoid overtopping.
