Ingredients
- 4 1/2 pounds red “B” potatoes, halved
- 1/2 cup fresh chopped Italian flat leaf parsley
- 1 Tablespoon minced garlic
- 1 teaspoon black pepper
Directions
Steam the potatoes in perforated hotel pan in commercial steamer or over water bath steamer on stove until fork tender.
When cooked, place in large bowl and toss with parsley, garlic and pepper. Hold hot at a minimum of 140 degrees.
