Ingredients
- .12 cup olive oil
- 2.5 pounds sliced zucchini
- 2.5 pounds sliced summer squash
- .0469 pound chopped parsley
- 1 Tablespoon lite soy sauce
- .1248 pound minced garlic
- .0078 pound red crushed pepper flakes
- .0078 pound kosher salt
- .0078 pound black pepper
- 1.75 pounds diced tomatoes in puree
Directions
1. Oil casserole dish and set aside.
2. Toss zucchini, summer squash, parsley, tamari and garlic to combine.
3. Season with crushed red pepper flakes, salt, and pepper.
4. Transfer to casserole dish and bake 350 degrees for 20 minutes.
5. Remove from oven and pour tomatoes over top and gently stir to combine.
6. Return casserole to the oven and bake 15 minutes or until vegetables are soft.
