Spicy Sweet Potato Casserole

Ingredients

  • 2 pounds sweet potatoes, peeled
  • 1 pound tomato juice
  • 4 ounces chili garlic sauce
  • 2 ounces lime juice
  • 1/4 ounce cumin herb, ground
  • 1/4 ounce coriander spice, ground
  • 1/4 ounce dark chili powder
  • 1/4 ounce fresh cilantro herb bunch
  • 1/4 ounce kosher salt
  • 1/4 ounce ground white pepper
  • 1 pound sliced jalapeno pepper
  • 5 pounds brown rice
  • 4.5 pounds water
  • 2 ounces olive oil blend

Directions

1. Cut sweet potatoes into 3/4″ dice and steam until al dente. Steam the rice until just under cooked approximately 26 minutes.

2. Meanwhile, in a rondeau that has been heated over a medium heat, add oil. When the oil is hot add the garlic and jalapeno mix. Sauté until tomatoes are just tender.
3. Add the chili garlic sauce, lime juice and spices. Sauté until fragrant and add the tomato juice. Cook until heated through.

4. Add the potatoes and rice. Stir until combined. Taste and re-season accordingly.

5. Place into the appropriate serving vessel and serve immediately
