Ingredients
- 2 pounds extra firm organic tofu
- 4 pounds spaghetti squash
- .5 pound onion, diced
- .25 pound soybean oil
- .5 pound red bell pepper
- 0.4 pound garlic in oil
- 0.0156 pound thyme herb
- 0.0156 pound rosemary herb
- 0.0156 pound kosher salt
- 0.0156 pound black restaurant pepper
- 0.0156 pound parsley flakes spice
Directions
Day Ahead:
1. Cut spaghetti squash in half and brush lightly with sterling oil and sprinkle lightly with kosher salt and pepper.
2. Roast in oven at 350 degrees Fahrenheit for approximately 30 minutes or until squash starts to turn golden brown.
3. Remove squash from oven and cool below 41 degrees Fahrenheit.
4. Once squash is cooled use a large spoon and scrape the squash out of the skin. Set aside for cooking the next day.
Cooking instructions:
1. Heat flat top grill to 350 degrees Fahrenheit. Heat oil and sauté onions, peppers, garlic, and tofu.
2. Once tofu starts to turn golden brown and onions are translucent add squash and fresh herbs.
3. Toss ingredients together well and heat until squash is fully heated. Season with kosher salt and pepper.
4. Serve in 1/2 2-inch hotel pan and garnish with chopped parsley.
