Ingredients
- 1 pound dry soba noodles
- 1 pound fresh sliced crimini mushrooms
- 1 pound fresh julienne sliced snow peas
- 1 pound fresh julienne sliced red bell peppers
- 3 cups 100% orange juice
- 1/2 cup unseasoned rice wine vinegar
- 1 quart boiling water
- 12 each green tea bags
- 1 1/4 cups toasted sesame seeds
- 16 chopped fine dried nori seaweed
Directions
1. Bring a pan of water to boil and add the noodles. Cook noodles for 3-5 minutes or until just tender; drain and rinse in cold water to cool. Steam snow peas for 1 to 2 minutes just until bright green and crisp. Combine soba noodles with mushrooms, snow peas and bell peppers. Set aside until ready for use.
2. Place tea bags in boiling water, let cool. Remove tea bags and combine tea with juice and vinegar. Toss with the soba noodles.
3. Coarsely grind toasted sesame seeds and toss into soba noodles with chooped nori. Hold cold for cold serve.
