Savory Oat Groats and Kale

Ingredients

  • 7 Tablespoons olive oil, divided
  • 2 cups fine chopped yellow onion
  • 4 each leek, white and pale green parts only, halved lengthwise, cut into matchsticks; rinsed well
  • 5 Tablespoons sliced garlic cloves
  • 2 cups small diced carrot
  • 4 cups oat groats
  • 2 quarts water
  • 1 Tablespoon kosher salt
  • 24 ounces Tuscan kale (cavolo nero), stemmed and cut into 1/2” wide strips
  • 4 pinches black pepper
  • 4 pinches chile flakes
  • 1 cup shaved parmesan cheese

Directions

Heat 1/4 cup of the olive oil in a rondo over medium heat until hot but not smoking. Add onion, leek and half the garlic. Cook, stirring until onion is translucent, about 5-7 minutes. Stir in carrots an groats; cook 1 minute. Add water and salt. Bring to a boil. Reduce heat to simmer,cover and cook 25 minutes.

Heat remaining oil in a large rondo over medium heat until hot but not smoking. Add remaining garlic; cook until garlic begins to turn golden, about 30 seconds. Stir in kale; cook, stirring until wilted, about 3 minutes.

Stir sautéed kale into groats. Cover; cook until liquid is completely absorbed and groats are tender but still chewy. Season with pepper and chile flakes and garnish with cheese.
