Ingredients

  • 10 cups fresh corn off the cob. Frozen/thawed is okay if that’s all that’s available
  • 2 cups canned, drained black beans
  • 1/4 cup minced yellow onions
  • 1/4 cup minced red bell pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 pinch cayenne
  • 1 teaspoon kosher salt
  • 1/4 cup fresh squeezed lime juice
  • 1/2 cup chopped fresh cilantro

Directions

In a large bowl, mix ingredients together, tossing thoroughly to combine. Reserve and hold at a maximum temperature of 41 degrees.
