Roasted Root Vegetables with Cumin and Coriander

Ingredients

  • 6 cups 1/4” diagonally cut, peeled carrots
  • 2 pounds red potatoes, cut into 1” cubes
  • 2 pounds parsnips, peeled cut into 1” pieces
  • 2 pounds turnips, washed, quartered and sliced 1/2” thick triangles
  • 2 pounds red onions, cut into 1” pieces
  • 5 Tablespoons extra virgin olive oil
  • 5 teaspoons ground cumin
  • 5 teaspoons ground coriander
  • 5 teaspoons garlic powder
  • 1 1/2 teaspoons Mrs Dash seasoning
  • 1 1/2 teaspoons freshly ground black pepper

Directions

  1. Toss each of the vegetables in a separate bowl, each with 1 tablespoon of olive oil, 1 teaspoon cumin, 1 teaspoon coriander and 1 teaspoon garlic powder. Coat vegetable well. Roast each vegetable separately on a sheet pan in a 450 degree oven until golden and tender, about 30 minutes. Each vegetable will cook differently, so check them.
  2. Remove the vegetables from the oven and combine in a large bowl. Toss together with Mrs Dash and pepper and serve.
