Ingredients
- 3 pounds canned drained dark red kidney bean
- 0.0625 pound soybean oil
- 0.75 pound diced onion
- 0.75 pound diced green pepper
- 0.75 pound diced celery
- 0.25 pound minced garlic
- 1 pound diced tomato in puree
- 0.0078 pound crushed red pepper
- 0.015 pound low sodium vegetable soup base
- 6 pounds cooked brown rice
Directions
1. Heat wok and add oil. When the oil is hot add the garlic, onion, celery and peppers. Sauté until the onions are fragrant and the other veggies are just tender.
2. Add the crushed red pepper, thyme and base. Sauté for about 3 minutes to allow the flavors to blend.
3. Add the diced tomatoes in puree and stir to combine. Then add the beans and the rice. Cook for approximately 10 minutes or until the mixture has reached an internal temperature of 145 degrees Fahrenheit for 15 seconds.
4. Place into a larger oval bon chef and serve immediately.
