- 2.6562 pounds golden quinoa
- 3.984 pounds water
- 1.5 pounds diced onion
- .75 pound diced green pepper
- .75 diced red pepper
- 1.5 pounds eggplant
- 1.5 pounds zucchini squash
- .125 pound minced ginger in water
- .0156 pound olive oil blend
- .5 pound korma paste
- 2 pounds lite coconut milk
- .0156 pound crushed red pepper
- 1.5 pounds cubed mango
- .25 pound fresh mint herb
- 1 cup real lemon juice
- .5 cup lime juice
Directions
1. Precook the quinoa by placing it into a 4-inch hotel pan and mixing it with the water, curry paste and the coconut milk (scrape off the fat and reserve it for later use). Cover with plastic and place it in the steamer for 25-35 minutes or until it is finished. Remove it from the steamer, cool and reserve for later use.
2. Make the dressing by combining the coconut fat and the olive oil, ginger, crushed red pepper and lemon and lime juices. Taste and re-season as necessary.
3. Once the Quinoa is cooled and the dressing is made, combine the quinoa with the veggies, fruit, mint and dressing.
4. Place in the appropriate serving container and serve at 40 degrees Fahrenheit or below
