Quinoa Currant Salad

Ingredients

  • 6 cups dried quinoa, preferably from Indian Harvest
  • 12 cups water
  • 2 tablespoons kosher salt
  • 1 cup dried currants
  • 1 1/2 cups water
  • 9 Tablespoons extra virgin olive oil
  • 3 Tablespoons sherry vinegar
  • 3 Tablespoons fresh orange juice
  • 3/4 cup finely chopped red onion
  • 1 cup rough chopped Italian flat leaf parsley
  • 3/4 teaspoon black pepper

Directions

  1. Place quinoa in a fine sieve and rinse under cold running water. Transfer quinoa to a large sauce pan and add salt and 12 cups water and bring to a boil. Reduce heat and simmer until liquid is completely absorbed and quinoa is tender, about 30-45 minutes.
  2. Meanwhile, put currants and 1 1/2 cups water in a small bowl and let stand until currants are softened, about 15 minutes. Drain currants well, discard water and set currants aside.
  3. When quinoa is cooked, place in a large bowl and add oil, vinegar and orange juice and toss to combine. Spread on a parchment lined sheet pan and place in walk-in cooler to cool rapidly. When quinoa is chilled, place back into large bowl and toss with onion, parsley, currants and pepper.
